The white beans and dry grain separated from its sheath (faba, plr. Fabes in Asturian), is a traditional crop in Asturias, which are documented in the references and s. XIX. These bead Phaseolus vulgaris L. (ie, "bean" in Castilian), and not the Vicia faba L. (this is, "bean" in Castilian). The "FABA ASTURIANA" currently has stamp Protected Geographical Indication (PGI)and are a fundamental ingredient of most universal dish Asturian gastronomy, "La Fabada".

But not all kinds of beans are suitable for preparing a stew. For the preparation of this dish is the mandatory use of the variety called "farm", "priest" or "butter" in Asturias qualifiers apply to the same type of faba. It is white beans, relatively large size and kidney-shaped, very soft skin and buttery on the palate when well cooked; to presoak considerably increase its volume. The seal of the FABA ASTURIANA Protected Geographical OTE (IGP) certifies the beans from this class that are harvested and packaged withingeographical boundaries of the Principality of Asturias, being controlled production and marketing by the Regulatory Board. Its main function is to guarantee the authenticity of Jewish,ensuring that each consumer packaging bearing a numbered exceeded rigorous testing before reaching your hands. 

Dried beans of variety "Granja Asturiana" come from plantations in said registered Geographical Indication (PGI). Cultivation techniques are traditional, tending to get the best quality beans. Harvesting is done with the utmost care, always ensuring grain maturity. The separation of the grain-shelled pod-done when the grain is dry and mature, and can be done both manually and mechanically, without wiping rather than by air and vibration. Dried beans purchased by packers to producers enrolled, are packaged in containers duly authorized by the Regulatory Council of the IGP for which brands, and after appropriate controls, the corresponding labels are issued.
