The natural cider brandyIt is part of Ark of Taste by Slow Foodand corresponds to the d 100% natural cider styles made with different local varieties of apple cider, some of them in recovery process. Cider brandy is distilled in tarry (an old distillation device much slower than that of the still but that seeks a more complete distillate) and is marketed "fresh" or aged in wood.
