CATA's notes:Medium flavor Fatty material Min. 45% Cheese made with cow's milk, with a conical shape and white color. The consistency of the paste varies with the degree of maturation, a firmness and medium adhesion being characteristic, as well as the impossibility of making a clean cut since it crumbles with great ease. Slightly acid taste, little by little salty. Smooth, lactic aroma and with a slight memory of yeasts, increasing with maturation.

Asturias has in its territory one of the largest cheese spots in Europe. In its production, cow, sheep or goat milks are involved, alone or mixed together.
